Sweet and salty, crispy/crunchy, your favorite trail mix, and 2x the chocolate, all layered together in one easy-to-make candy bark!

Since Nate got the 3rd off work, we jumped at the chance (probably our last chance for awhile!!) to get away together for a couple days, and we drove up to my parents cabin in the mountains Thursday night. The highs were a good 40 degrees cooler than here in Phoenix, and it literally felt like heaven to escape the stress of real life and take a breath for just a weekend. Things are picking up the pace in our Uganda adoption (look for an update about that on Friday!), so just knowing that life is about to get a whole lot more adventurous really soon, made me treasure these last couple quiet days that much more.
Another thing on the mind with all this outdoor time I’ve been enjoying? Trail mix. Isn’t that everyone’s go-to snack for long days hiking and outdoor adventures? You know what’s even better than just enjoying it straight out of the bag? Using it in baking. I’ve made these cookies with lots of trail mix love back a few months ago, but this time I wanted a recipe I could make without having to heat up the oven. Here’s the answer to all my trail mix thoughts:
Trail Mix Candy Bark! Bark is a fabulous thing to make for yourself, for your friends, for parties and get-togethers! It comes together so quickly, with very little effort, and it tastes absolutely amazing! (Ps-have you tried this other bark recipe yet?? Y.U.M.) You can simply use a bag of premade trail mix, or you can customize it to your favorite flavors by throwing together your favorite nuts, seeds, dried fruits, M&M’s, etc.!
All you’ve gotta do for all this salty/sweet chocolatey bark, is melt the chocolate, sprinkle the trail mix over it, and then top everything off with a drizzle of white chocolate! Pop it in the refrigerator, cut it into pieces, and watch it disappear first at your next party!
- 1 pound Chocolate (I used 1 pound from a Trader Joes Pound Plus Dark Chocolate Bar), chopped into pieces
- 1 cup Pretzel twists (Gluten Free, if needed)
- 1 ½ cups Trail Mix
- 4 ounces White Chocolate, for melting (or White Almond Bark) (do not use white chocolate chips), chopped
- Prepare by lining a large baking sheet with wax paper or parchment paper. Measure out pretzels and Trail Mix and set them aside so that they are ready to use.
- Place chocolate pieces into a large microwave safe bowl. Microwave on 50% power for 3-4 minutes, pausing the microwave to stir chocolate every 30 seconds. (The pausing and stirring will ensure that chocolate is melted evenly and does not get overcooked or scorched.)
- Once the chocolate is completely smooth and melted, pour the hot chocolate onto the prepared baking sheet and spread evenly into a large rectangle with a knife.
- Working quickly while the chocolate is still hot, stick the pretzels and sprinkle Trail Mix pieces onto the top of the chocolate (make sure everything is touching the chocolate).
- Place White Chocolate or Almond Bark in a small microwave safe bowl, and microwave for about 2 minutes or until completely smooth and melted, stirring every 30 seconds. Drizzle over bark using a spoon or squeeze bottle.
- Allow to completely harden, at least 60 minutes in the refrigerator.
- Cut (with a large, flat-edge, heavy-duty knife) bark into pieces.
- For best results, store tightly covered in the refrigerator.
- Makes about 30-36 pieces.
