Mine was really crazy busy; it flew by a lot faster than I would’ve liked, definitely!

AWESOME NEWS: The state of AZ approved our Home Study the end of last week! Woohoo!! :) It’s such a huge milestone that is finally crossed for our Uganda adoption, and I’m so happy!! Now that we have this done, since we’re adopting internationally, we have to have United States government approval to adopt as well. So we will be able to send our petition out to them hopefully this week. Now that we have an approved home study, we also can begin to apply for adoption grants. Nate and I got started working on those this weekend, and boy-these grant applications are BEASTS to say the least! I thought filling out my FAFSA was bad…I was horribly, horribly wrong! I see hours and hours of writing and being interviewed in our future, and that’s just a start! Each one will take us days and weeks to complete…they honestly feel just so overwhelming right now, and throwing these on top of the load we’re already juggling right now feels downright impossible! I just want to go hide under my bed to get away from those daunting pages lying on my kitchen table…but we need the money to keep our adoption progressing, so I just keep telling myself to not give up; just take these apps just one line at a time and I’m praying like crazy that they will pay off in the end and be worth the effort.

Anywhoo, sorry about that rabbit trail! I’m supposed to be here telling you about this deliciously amazing smoothie recipe I’ve got for you today! And boy, is it ever yummy! As you know from last week, I’m on a huge Orange Essential Oil kick right now! (Have you tried the Orange Creamsicle Cheesecake Dip yet?? It’s heavenly, I’m tellin you!) I just knew a smoothie recipe was in this Essential Oil’s future.


I don’t really ever buy juice at my house, because it doesn’t get used when I do buy it; I tend to reach for a piece of whole fruit instead of drinking a glass of sugary juice. But at the same time, I don’t really love putting whole oranges into my smoothies, because even when I blend it really well, that white stringy pith is still left. I know that pith is supposed to be good for you, but I just don’t love when it gets stuck in my straw and teeth when I’m sipping my smoothies. Anyone else out there not like the pith either??

Here’s where Orange Essential Oil comes in. Just a couple drops of it, and you’ve got this amazing and fresh orange flavor (and all of it really comes from the actual fruit!)! And there’s no pith!! :)

Blended with two of my other favorite fruits, mangos and strawberries, plus protein-packed yogurt, you’re left with this deliciously smooth and creamy smoothie, packed with nutrients and popping with fresh springtime flavor! :)


Ps-you really can use orange juice in this smoothie instead of essential oil, if you prefer! Simply substitute half of the milk in the recipe for orange juice.

Mangoes, Strawberries, and Orange Essential Oil pack so much fresh flavor into this thick and creamy smoothie; perfect for breakfast, or any time of the day!
  • 1 cup Crushed Ice
  • 1 cup frozen diced Mango
  • ¾ cup frozen Strawberries
  • 1 container Vanilla Greek Yogurt (or Coconut Yogurt for dairy-free)
  • 1 cup Milk*
  • 2-3 drops Orange Essential Oil**
  • ⅛ teaspoon Xanthan Gum*
  • Liquid Stevia, to taste*
  1. Combine all ingredients in a high-powered blender, and blend until smooth. It may be necessary (even 2-3 times, depending on the type of blender you use) to stop the blender, scrape down the sides with a rubber spatula, add additional liquid, stevia, or xanthan gum if needed, and then restart to complete blending.
  2. Enjoy!
  3. Makes 1 large serving
*Use your favorite variety of milk in this recipe! I always use refrigerated Unsweetened Coconut milk; the variety of milk you use will affect the sweetness and the thickness of the smoothie. I always recommend starting by adding the least amount of sweetener and Xanthan Gum to the blender your first time making this, and then partway thru the blending, stop the blender to taste the smoothie, and add more sweetener/xanthan gum/milk to taste.

**Feel free to use orange juice in this recipe, if you prefer. Simply substitute half of the milk called for in the recipe for orange juice. (1/2 cup milk + ½ cup orange juice.)

    It’s looks delicious. I have not read up on essential oils and didn’t know you could place them in foods. Interesting…looks like I’ve got more reading to do.
