Cinnamon Brownies with Pumpkin Spice M&M's

Infused with cinnamon and jam-packed with Pumpkin Spice M&M’s! These brownies are the perfect chocolate-lover’s fall dessert!
  • ½ cup Flour*
  • 1 teaspoon Cinnamon
  • ¼ teaspoon Baking Powder
  • ¼ teaspoon Salt
  • ½ cup Butter (1 stick)
  • ¼ cup + 2 Tablespoons Unsweetened Cocoa Powder
  • 1 cup Granulated Sugar
  • 2 Large Eggs
  • 2 teaspoons Vanilla Extract
  • 1 cup Pumpkin Spice M&M’s, divided use
  1. Preheat oven to 325 degrees F. Line an 8x8-inch baking pan with foil, leaving overhang on each side; spray lightly with nonstick cooking spray. Set aside.
  2. In a medium mixing bowl, toss together Flour, Cinnamon, Baking Powder, and Salt. Set Aside.
  3. In a large mixing bowl, melt butter in the microwave. Whisk Cocoa Powder into melted butter until smooth. Add Sugar, and whisk well until fully incorporated (mixture will be gritty in texture). Add eggs, one at a time, whisking well after each addition. Finally, whisk in Vanilla Extract.
  4. Using a large spoon or rubber spatula, slowly mix dry ingredients into wet ingredients until just combined. Do not overmix. Fold in ½ cup M&M’s.
  5. Pour brownie batter into prepared baking pan, and top with remaining ½ cup M&M’s.
  6. Bake for 35-45 minutes, until a toothpick inserted into the center comes out with a few moist crumbs. Cool completely on a wire rack before cutting into bars. Lift foil out of baking pan for easy removal of brownies.
  7. Makes 16 brownies.
*Either All-Purpose Flour or Better Batter Gluten Free Flour with result in nearly identical results, and either type works perfectly in this recipe
