Easy-to-make, customizable, and healthy! This delicious Mexican Chicken and Rice Wraps Recipe is packed with flavor and on your table in 30 minutes!
  • 1 package (6 to 7-ounce) Spanish or Mexican Rice (such as Rice-A-Roni or Lundberg)
  • Any required preparation ingredients called for on rice package instructions
  • 1 cup to 1 and ½ cups chopped or shredded cooked chicken
  • 1 cup canned black beans (drained)
  • 1 cup corn
  • Optional: ½ cup diced onions, ½ cup diced green or red peppers
  • 8-10 flour tortillas
  • Optional: shredded cheese, cilantro, chopped tomatoes, guacamole, salsa
  1. In a large, deep skillet, cook rice as directed on package.
  2. Add shredded chicken, beans, and corn (and diced onions or peppers, if desired) into the rice, and stir to combine. Let sit for 5 minutes.
  3. To serve, scoop rice mixture into flour tortillas, and roll. Enjoy with optional ingredients, if desired.
  4. Serves 5-6
