Nutella Krispy Treats

Rice Krispy Treats are taken to a whole new level of deliciousness with the addition of nutella! Even better, these can be made both gluten and dairy free!
Ingredients
  • 6 Tablespoons Coconut Oil or butter
  • 1 teaspoon Vanilla Extract
  • 16 ounces marshmallows
  • 8 cups Crispy Rice Cereal*
  • ⅓ cup Nutella or chocolate-hazelnut spread (homemade or store-bought)**
  • ¼ cup chocolate sprinkles + more for sprinkling on top (optional)***
Instructions
  1. Grease a 9x13-inch pan (I used a small drizzle of melted coconut oil, and rubbed it over the bottom and sides of the pan to keep mine dairy-free)
  2. Melt Coconut Oil (or butter) and vanilla over low heat in a large pot. Add marshmallows, and stirring frequently, completely melt the marshmallows. This takes a little time, but be patient; a slow melt over low heat will ensure the most desirable results. (Ps-use a strong spoon!)
  3. Heat Nutella for about 15-20 seconds in the microwave, then add to melted marshmallow mixture. Stir very well to fully combine all ingredients. Remove from heat.
  4. Add crispy rice cereal and slowly, gently, mix into Nutella-marshmallow mixture until all ingredients are fully combined. Stir in sprinkles, if desired.
  5. Using a strong greased spatula, press mixture into prepared 9x13 pan. I used my fingers, coated with a little oil to help get everything evenly dispersed and smooth out the top of the treats. Top with sprinkles if desired.
  6. Let treats sit at room temperature for at least 30 minutes before cutting into bars.
  7. Makes 18-24 bars (depending on preferred size)
  8. *Most brands of Crispy Rice cereal seems as tho they should be gluten free, but they ARE NOT. Most varieties contain barley malt, which is a gluten-containing ingredient. Look for a brand that is specifically marked “Gluten Free” to be safe, if this is a dietary concern for you. I used Barbara’s Organic Brown Rice Crisps.
  9. **My Homemade Nutella is gluten and dairy free, and works great in this recipe. Store bought Nutella works great also in this recipe, but it does contains dairy, so follow your dietary needs when choosing ingredients.
  10. ***Double-check sprinkle ingredients before using if you have food allergies to ensure they are safe for you to eat.
