Coconut Cashew Granola

Serves: 5-6 cups
Crispy, crunchy granola clusters, packed with coconut and cashews! A super simple recipe, made with healthy ingredients; a delicious breakfast or snack!
  • 2 ½ cups Old Fashioned Oats (Gluten Free, if necessary)
  • ⅔ cup Shredded Coconut*, divided use
  • ⅔ cup Salted Cashews
  • 1 teaspoon Salt
  • ½ cup Honey
  • 2 Tablespoons Melted Coconut Oil
  • 1 teaspoon Coconut Extract
  1. Preheat oven to 300 degrees F. Prepare two large baking sheets by lining with silicone baking mats. Set aside.
  2. In a large mixing bowl, stir to combine Oats, ⅓ cup Shredded Coconut, Cashews, and Salt. Set aside.
  3. In a small bowl, stir to combine Honey, Coconut Oil, and Coconut Extract. Pour the mixture into bowl of dry ingredients, and stir very well until everything is coated with the honey mixture.
  4. Divide the mixture between the prepared baking sheets, and spread into a flat layer.
  5. Bake for 40-42 minutes, until golden brown, stirring halfway through the bake time.
  6. When done baking, remove pans from oven, and sprinkle remaining ⅓ cup shredded coconut over granola. Allow granola to cool on the pan for about 20 minutes without touching or stirring the granola. This will allow granola to crisp up.
  7. Break cooled granola apart into clusters and store in an airtight container for up to 4 weeks.
  8. Makes about 5-6 cups.
*If you'd like to make the granola slightly sweeter, use sweetened shredded coconut; for a less sweet granola, use unsweetened shredded coconut.
