Chicken Macaroni Salad (Gluten-Free Option)

Easy-to-make, customizable, and healthy, this delicious Chicken Macaroni Salad is perfect for hot and busy summer days!
  • 8 ounces uncooked macaroni (I use Maplegrove Foods Gluten Free Elbows)
  • 4 ounces shredded cooked chicken
  • 1 and ⅓ cup peas
  • ½ cup shredded cheese (use your favorite - I like using a 2% Mexican Blend)
  • 16-20 olives, sliced
  • ¼ cup sun-dried tomatoes, patted dry
  • ½ cup ranch dressing (my favorite is Hidden Valley Fat Free Ranch)
  • ¼ cup Sun-dried tomato dressing OR Italian dressing
  1. Cook macaroni according to package dressing; drain.
  2. In a large bowl, combine macaroni, chicken, peas, cheese, sliced olives, and sun-dried tomatoes.
  3. In a small bowl, combine ranch dressing with sun-dried tomato/Italian dressing and mix well.
  4. Pour dressing over pasta mixture, and mix well to evenly combine all ingredients.
  5. Refrigerate until ready to eat, at least 2 hours; serve cold.
  6. Serves 4
