Ok, to be honest tho, I live in Arizona—so grilling is kind of a year-round thing, but still. There’s just something about that smoky smell from the grill, on a warm spring night, as the blazing orange sun sends those breathtaking streaks of red and pink across the sky while sinking behind the desert mountains. I’m savoring this time of year, because I know that once summer hits, if it’s anything like last year, it’ll be unbearable to even grill…standing in a pool of sweat at a flaming hot grill in 118-degree weather is not exactly an optimal experience. Your skin cooks faster than the burgers you’re flipping! Cringing just thinking about what the sun is cooking up for us this summer! I know y’all up north and east have had the worst weather ever this winter, but your bragging rights over us desert-folk are coming up in just a few short weeks!
I’m not even going to think about summer anymore….all I want to think about is this grill seasoning. I love making my own seasonings…it’s typically much cheaper than buying them at the store, plus you can control exactly what is going into into that jar-and adjust it to your personal tastes! (Ps-have you tried my Copycat Red Robin Seasoning or this Ranch Seasoning yet?)
Coffee grounds, plus a few spices from your pantry are the only ingredients you’ll need to whip up this super-simple grill rub that will give your chicken, steak, burgers, and even heartier veggies (think portabella mushrooms, eggplant, or potatoes!) an incredibly deep, robust, not-too-spicy flavor punch that’s just addicting! The coffee flavor, once cooked into the food, is honestly very subtle, and even non-coffee drinkers will fall in love with the smoky flavor this seasoning offers! I just whipped up this batch of seasoning last week, and even though it makes a good-sized serving, I know it’ll just be a couple weeks before I make another batch…I’m so amazed at what just a bend of few spices can do to make dinner’s flavors pop in a super-healthy way!

- ¼ cup Coffee Grounds
- 1 Tablespoon Paprika
- 1 Tablespoon Garlic Powder
- 2 teaspoons Brown Sugar
- 1 teaspoon Dried Oregano
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ½ teaspoon Cayenne
- In a medium bowl, whisk all ingredients together until combined.
- Makes about ½ cup.
- Store in a tightly sealed container at room temperature for up to 6 months.
- For best flavor, generously sprinkle over foods an hour or more before grilling.
