I hope you all have a wonderful holiday weekend, maybe celebrating with friends and family, and watching fireworks!!

It’s hard to believe that we’ve hit the middle of summer already! I don’t love the high temps we’re getting here in Arizona right now, but I do absolutely love summer produce! :) Hands down, my very favorite summer vegetable is zucchini; I just can’t get enough of it right now! Last week I shared this delicious muffin recipe featuring the tasty summer squash, and today I’ve got another zucchini treat for you to fall in love with!

On hot summer days, the last thing most of us want to do is heat up the oven. Am I right? It’s hot and sticky enough with these sky-high temperatures outside, so why make the inside of the house hot and sweaty too, by heating up the oven? Stay cool AND satisfy those cookie cravings by whipping up a batch of these super-simple Chocolate Zucchini No-Bake Cookies! These cookies are inspired by these original No Bake Cookies (which are also amazing, by the way!); but today’s version uses all that yummy in-season zucchini to really give these an extra fresh summery flavor!

These cookies are also awesome, because they’re naturally nut-free, AND you can tweak the ingredients to make it also gluten and dairy free as well, if you’d like! It’s an easy swap to choose gluten free oats instead of the traditional kind, and just use coconut oil, your favorite dairy-free milk, and dairy free chocolate chips instead of butter, cow’s milk, and dairy-containing chocolate, for a dairy free version.

My one really important suggestion as you’re making Chocolate Zucchini No-Bake Cookies, is to squeeze and drain as much moisture out of the shredded zucchini as humanly possible, before you add it into the mixture. Zucchini naturally carries quite a bit of water and moisture inside of it, which is delicious if you’re eating it raw, but not optimal if you’re using it in this recipe. I tell you this from experience! Failing to dry the zucchini will make the cookie dough mixture extra wet and runny, when what you really want it to be is thick and more dense. The runny dough will cause a lot of spreading as you try spoon the mixture onto the baking sheet; it can also cause the cookies not to completely firm up once chilled—It ends up more like cold chocolate oatmeal (which honestly, is still really yummy! But not really cookie-like.). I like to set the shredded zucchini into a fine-mesh strainer, and firmly squeeze as much of the water out of the vegetable as possible, and then use paper towels to blot away any remaining moisture (But hey-I’ve also been known to use a hair dryer too, when I’ve been out of paper towels!), so use whatever method is easiest for you, just be sure to dry, dry, dry!

Chocolate Zucchini No-Bake Cookies

Ingredients
  • 1 cup Granulated Sugar
  • 1 cup Brown Sugar
  • ½ cup Butter or Coconut Oil
  • ½ cup Milk (any variety)
  • 1 teaspoon Cinnamon
  • ½ teaspoon Salt
  • 3 cups Old-Fashioned Oats (Gluten Free, if needed)
  • 1 cup shredded Zucchini (about 1 medium), drained/patted dry of excess moisture
  • 1 cup Semi-Sweet Chocolate Chips (Dairy-free, if needed)
  • ½ cup Shredded Coconut
Instructions
  1. Line 2 large baking sheets with wax paper; set aside.
  2. In a medium saucepan, combine Granulated Sugar, Brown Sugar, Butter/Coconut Oil, Milk, Cinnamon, and Salt. Over medium/high heat, melt and bring to a boil, stirring frequently. Remove from heat.
  3. Add Oats, Zucchini, Chocolate Chips, and Coconut, and stir well until chocolate is melted and all ingredients are combined. Mixture will be thick.
  4. Drop by the spoonful (about 1-2 Tablespoons each) onto the prepared baking sheets.
  5. Refrigerate for at least 6 hours, or overnight, before removing cookies from the baking sheet.
  6. Store in a tightly sealed container, in the refrigerator for up to 10 days.
  7. Makes about 36-40 cookies.

    These look so good! You’re on a roll with the zucchini recipes! Keep them coming! We have more of the green stuff than we know what to do with. My family would be much happier to see me use it in cookies rather than in a salad. :) Pinned!
